How big a deal is it to remove the fenders and gas tank for painting on a road king? Any pitfalls to watch out for?

Not difficult, just use care. Pull the fuel pump fuse and run fuel out of injectors before disconnecting QD fuel line (see self help tips). Plan your movements when disconnecting the fuel tank crossover hose at the front of the tank. It's a 3 handed job, but can be done with 2 hands and a plan. Bag and label fender bolts. Front tire probably has to come off to remove fender. Be careful separating electrical connectors, they all have a method (this is where your service manual helps a lot). If you have a camera take lots of pictures to help your memory.
New paint is a scratch and chip magnet. Use rags and towels wherever possible to prevent damage to the new paint.
