Is there a way of knowing if a bike that is advertised as having Screaming Eagle exhausts has had a re-jet/re-map?

Would the bike run badly if it hadn't ?
 
Rejet= open it up and look at the jetting sizes.

Remap= dealer has to hook up to it with the digital tech to read it.
 
I believe the carb to be stock, what size should I put in? It does seem to be lean as the pipes are still shiney on the inside after a 100 miles or so and it still pops on deceleration. Also 50+ MPG. Thanks

Popping on decel will happen with the low restriction mufflers. It also happens with stock mufflers but isn't heard very easily.
