What woul cause oil to get into the carberator on my 2000 fxst?

is it coming out the breather and into the carb or vlowing back from the intake .. could be a few things

Overfilled with oil
oil contamination
breather system problems

A few things could cause that.

Over filled, bad umbrella valves in the heads, sustained high speed driving, oil pump alignment.

Worn out umbrella valves, and sustained high speeds........yup, that's my guess....especially on a Sportster!! (I Know you have a softail!)
