When I hear Happy Holidays I have to ask what holiday they are referrring to.

Your correct. Nothing wrong with saying Happy Holidays. What seems wrong is the implication that saying Merry Christmas is inappropriate and that Happy Holidays or something similar should be said instead of Merry Christmas.

Right on. Those who don't like Christmas aren't compelled to celebrate but shouldn't interfere with those who do!

Since reading this I added "Merry Christmas" to my email signature and phone message at work.

"Happy Holidays" is a given. The fact that it's a holiday is celebration enough!
