When performing electrical work on a customers bike, is it a required procedure that you unhook the battery?

Not necessarily, depends on what is being done.

You have to be a little more specific on what type of electrical work, most of electrical problem requires battery stay connected to perform tests, then when replacing parts, again depending on which part that needs to be replace, like starter then yes but if it's a light bulb then no.

By the way, I'm NOT a HD tech.
