Back in the day, me an some friends used to do that on motocross bikes. We had a pond that we had a good flat run at, lean back, hit it in fourth or fifth gear and never let up, keep accelerating.

The knobbies displaced enough water to keep the front end up and the bike planed out. That pond was a good 75' across and 6-8 ' deep.
