93, but once a month I run a gallon or two of 112 in a tank of 93 to clean it out.

Shell v power 93 octane. Pull between 48 and 50 mpg using this on a 96 roadking.

Here in Australia Im using 98 Premium. Mechanic advised to use this due to the work done to bike so far Stage 2.

Please explain how running 112 in it cleans it out?
Higher octane fuel burns slower that is not good for an engine not made for it. Most HD are built to run on 91 so even 93 is a bit of over kill. ( HD that have had compression jacked up will need a bit higher like 93) Octane has nothing to do with cleaners that maybe added to the fuel. In fact some additives used in racing fuel or aircraft fuels are not the best for your bike.
Most High end stations nowdays sell top tier fuels that have plenty of cleaners added to them. Add of a bit of insurance a little sea foam couple times a season of riding will not hurt.

I was told to use Euro 98 Super rather than the 95 Regular alternative. I'm not sure how that compares to the US octane standards.

thats the middle grade that the US uses
i run the glide on 93 and the Bob on 99 in the UK

Your 91 octane "Mid Grade" is the highest octane gas I've seen at the pumps in So CA, I didn't even know 93 octane was available anywhere.
